 In many cases, uzbek restaurants are outside located. The system is a little bit different according to the size but I am going to explain it based on the exemplary restaurant in Namangan. In Uzbek, people think that as long as staying under the shadow, it's cool even on a hot summer day. Therefore, the outdoor side is covered with a tent to block sunlight. It's ordinary. Also this restaurant was covered with it. In the building there are lots of rooms and the room fee is different according to the grade, from 500 so'm to 5,000 so'm. For example, expensive rooms equip with air conditioner and luxurious decorations. This restaurant uniquely had a boomerang shaped building and on the roof there were tables ready. In a Korean view, this is a big restaurant. It is located at the center of a park. And there are tables ready outdoors. And of course, the preferred tables are near water, river or something like that. And usually near the entrance there is a shashlik reparation stand. It seems like seducing guests with delicious smell. And very special thing is that the cooks are separated according to the types of meals. Shops are also there and selling drinks, cracks, bread and so on. Why separated? I am going to explain it also later. 


















The system is very different from that of Korea. I've got interested in it naturally while eating there. And I was surprised at the rational system in their own way. The main is that the workers there make money as much as they work.


 Let's look at a daily work schedule of a waitress.

 



A day schedule


Morning

6 am - Wake up, several preparations,

7 am - Arrive around 7:30 and prepare to work,

8 am - Cleaning(Spraying water on floor, there are sweepers separately) and eat breakfast,

9 am - Waiting for guests


Afternoon

2 pm - When there are less guest, eat lunch

7 pm - Dinner

10 pm - Calculations

11 pm - Getting home




 I can say that the labor strength would not be that different from that of Korea. Of course comparing with that of western countries, it's very strong. The waitress or waiters(usually girls working there) do an important role, coordinating between cook and the guests. The position and the role is different from that of Korea. In Korea, waiters are just employees with regular salary but here waiters have their own roles. Which means how they do depends on their decision. But this job is not a preferred one. In Korea, students do this work for making money for a tuition, which has a positive attitude on it. But here only who needs to make money but no other proper jobs take this job and they have to deal with many male customers. In Musilim world, it's not considered as proper.


 The salary or the money they make depends on how much and how able they are. In other words, the amount of guests they are making decide the money they make. Therefore they need to make regular customers. The tips is about 10% but small restaurants have 5%. 


 And then let's write about the relationship between waiters and guests. In Korean way, waiters should take guests regardless of their preference. But here if they don't want, they can deny the guests and let other waiter take care of them. And even though preferred customer comes, sometimes when they are so busy, they can't take them. They prefer big group guests. They serve in the unit of table. If there are many guests on a table, they get more money. Guests they hate are the ones who come alone and ask many things. Sometimes there are guests who don't pay and flee. If the guests don't pay, the waiters should pay with their own money. I felt here the exploitation because it's not the sole fault of waiter. At least half of the money should be paid by the boss. When they are not that lucky, they might have to pay all the money they earn that day...


 You can see waiters carrying 'napkins'. When a guest asks for it, they give some, because the napkins are served by waiters after buy it with their own money. 


The characteristics are followings.


1) Here waiters and waitress opens the restaurants.

2) In Korea, waiters or waitress don't have a choice to choose guests.

3) Here waiters or waitrees prefer group quests.

4) They make more money when they got more guests.

5) After work ends, they calculate their earnings... which means they got all the day revenue and then they divide accordingly. In other words, they do a cashier's work.

6) They are usually young and that waitresses are old means they are not married yet. The better restaurants have the younger waitresses.

7) There is a manager and he or she recruits waiters and waitress. They prefer skilled and experience ones and give one day trial.
